Bell Pepper Stir-fry



for the recipe:
1 red pepper
1 green pepper
1 onion
2 cloves of garlic
2 tbsp mayo
2 tbsp milk
2 tbsp teriyaki sauce
1 tsp parsley
1 tbsp basil
2 tbsp olive oil
salt&pepper (to taste)

Heat the olive oil in a pan over medium-high heat. Combine the red pepper, green pepper, onion, garlic, salt, and pepper in the pan and saute for about 10 minutes until the peppers are fully cooked. Add the mayo, milk, teriyaki, parsley, and basil to the cooked pepper mixture and cook for an additional 2-3 minutes. The combination of mayo and milk in the pepper mixture will make a creamy sauce. Serve with rice, pasta, or tortillas. Enjoy :)

Mushroom and Egg Skillet





for the recipe:
3 eggs
2 tomatoes
1-1/2 cups of mushrooms
1 tbsp basil
1 tbsp parsley
1/2 tsp paprika
1/2 tsp garlic powder
1 tbsp teriyaki sauce
1 tbsp milk
2 tbsp olive oil
salt&pepper (to taste)

Heat the olive oil in a pan over medium-high heat. Add the chopped tomatoes and cook for 3-4 minutes until soft. Add the mushrooms, basil, parsley, paprika, garlic powder,teriyaki, salt, and pepper to the pan and saute for 5-6 minutes. When the mushrooms are cooked, add the eggs and milk and scramble until eggs are ready. Enjoy :)

Pasta Salad





for the recipe:
1 box colored rotini
1 red bell pepper
1 yellow/orange bell pepper
1 green bell pepper
1 cup of mushrooms
1 onion
3 cloves of garlic
1 tbsp lemon juice
1/2 tsp paprika
1 tbsp parsley
1 tbsp basil
1/4 cup teriyaki sauce
2 tbsp mayo
2 tbsp milk
1 tbsp brown sugar
1 tbsp bbq sauce
3/4 cup sour cream
1/4 cup ketchup
2 tbsp olive oil
salt and pepper(to taste)


Cook rotini according to package directions. Meanwhile, grab a pan and heat the olive oil until hot. Combine the bell peppers, onions, garlic, salt, and pepper and place them in the olive oil. Saute over medium-high heat until the vegetables soften. This should take about 10 minutes. After the vegetables have cooked thoroughly, add the mushrooms, lemon juice, paprika, parsley, basil. teriyaki sauce, mayo, milk, and brown sugar into the pan and cook for about 5 more minutes until the mushrooms are ready. The vegetable mixture should then look like this:



Now, take this vegetable mixture and combine it with your cooked rotini. Add the ketchup, sour cream, bbq sauce, and more salt&pepper (if you'd like) to the mix. Enjoy :)

Japanese Sauce



If there has to be one sauce in the world that you should eat EVERYTHING with--this sauce would be it. This Japanese white sauce is the most delicious sauce you can ever add to any dish, and it goes perfectly with rice, meats, salads, pastas, panini's and so much more. You have to try it. I'm telling you, love is waiting. I first had this sauce in a Hibachi Steakhouse when I first moved to NC, and my goodness, I fell in love. I spent four months trying to figure out what was in that sauce, and after a dozen of tries and errors, I finally managed to get this sauce to the right consistency. You NEED to make this. It is absolutely worth it.

the recipe:
1-1/4 cup of mayo
1/3 cup water
1-1/2 tbs butter
1 tsp tomato paste
1 tsp sugar
1/2 tsp garlic powder
1/4 tsp paprika
1/8 tsp cayenne pepper

Combine all the ingredients in a medium mixing bowl and blend until smooth. Cover the sauce and refrigerate overnight. You MUST refrigerate the sauce overnight in order to allow for all the flavors to blend it. The sauce will NOT taste right if you skip this process. Enjoy :)

5-Layered Mexican Chicken


This recipe is perfect for those cold winter nights and it is absolutely super easy to make. The base of this dish is flavored rice topped with beans, chicken, sour cream, and tortilla chips. All you have to do is prepare each layer separately, and when it's time to eat, just pile up each layer over the other to get this delicious result.

for the rice:
1 cup of rice
1 tsp oregano
1/2 tsp garlic powder
1/4 tsp paprika
salt&pepper (to taste)
water

Combine 1 cup of rice with all the dry ingredients and cook according to package directions. Set aside when done.

for the beans:
1 can of refried beans
2 tsp of brown sugar
2 tbsp of salsa
1 tbsp of sweet and sour sauce
1/2 tsp garlic powder
splash of milk
salt&pepper (to taste)

Combine the refried beans, brown sugar, salsa, sweet and sour sauce, garlic powder, milk, salt, and pepper in a medium sauce pan over medium high heat until bubbly. Lower heat, cover, and keep warm until ready to serve.

for the chicken:
1-1/2 pounds of boneless skinless chicken breasts
2 cloves of garlic
1 large onion
1 tsp oregano
1/4 cup of salsa
2 tbsp of mayo
1 tsp teriyaki sauce
1 tbsp olive oil
salt&pepper (to taste)

Drizzle your pan with olive oil and set at a medium heat until the pan is hot. Cut up the onion and garlic and add to the pan for 5-10 minutes until the onion withers. Meanwhile, cut up your chicken breast into thin strips and add to the withered onions and garlic. After the chicken is slightly browned on each side (about after 5 minutes), add the oregano, salsa, mayo, teriyaki sauce, salt and pepper. Cook for another 5 minutes. Keep warm until ready to serve.

Now that the rice, beans, and chicken are cooked, grab a plate.
Add some rice to the plate and top it off with a layer of beans, a layer of chicken, a layer of sour cream, and a handful of tortilla strips. Enjoy :)

So let us begin...

I finally decided to make my own blog, and although this may seem completely trivial, coming from someone as indecisive and lethargic as I can be, this feels like the greatest accomplishment. Now I can actually entertain myself with things other than the words of Homer and Dante along with the pierce and agonizing screams of my 6-month old baby. With this blog, I am attempting to cook myself away from the stress of school and motherhood, and although I am not promising you anything spectacularly special, I can honestly say that you will find some of my dishes, well...charming. And to make this even more enjoyable, I can promise you that, unless otherwise indicated, these are all my own, made-up, and one of a kind recipes. Enjoy :)
